There's nothing more humbling in Shetland than witnessing the power of nature. It controls our lives. Those of us who choose to lay ourselves before it are humbled by the massive forces at work. I use that same form of humility when I address a salmon. I submit to the fish . To its structure. How it's formed. If I surrender to the fish it will surrender to me. With the help from very sharp carbon steel it is possible to create the perfect fillet. Slowly I get ever closer but often need reminding of my human frailty by the greatest powers our island home endures.
