All 3 cuts which I offer are unique in flavour and texture. Due to it's thinness I must devote all my experience to only removing the thinnest layers of fat and skin to reveal the belly cut. Only the sharpest of knives can shave such thin layers and any lapse of concentration, even for a second, could easily ruin this perfect treat.
